Grilled Lamb Gyros

Ingredients
1 Medium Onion, cut into chunks2 garlic cloves2 tbsp xylitol1 tbsp ground mustard.5 tsp ground ginger1.5 tsp pepper.5 tsp cayenne pepper.5 cup soy sauce.25 cup water2lbs lamb stew meatCUCUMBER SAUCE:1 medium cucumber4 garlic cloves.5 tsp salt.33 cup cider vinegar.33 cup olive oil2 cups light sour cream10 whole wheat pita pocketsThinly sliced onionsChopped Tomatoes
Directions
Blend onion, garlic, xylitol, mustard, ginger, pepper, and cayenne in a food processor until onion is finely chopped. Add soy sauce and water and process until blended.Place with lamb in a large plastic zip lock and marinade for 1-2 hours in refrigerator.
For sauce, combine the cucumber, garlic and salt in food processor and process until cucumber is chopped, add vinegar and oil then process until blended, transfer to bowl and stir in sour cream. Refrigerate until serving.
Drain and discard marinade. Grill beef, covered, over medium-hot heat until meat is done. Put meat in pitas with cucumber sauce, sliced onion and tomato. Makes 10 sandwiches.

    I cheated and bought pre-sliced lamb already seasoned at the butcher shop. All I had to do was fry it a bit, slice the onion and tomato and heat the pitas. The tzatziki sauce was very good. - 1/24/21
