BBQ Turkey Meatloaf

2 lbs. ground chicken, lean turkey, or lean beef 1 egg, lightly beaten 3/4 cup oats or bread crumbs, or use a combination 1 cup barbecue sauce 1/2 tsp. garlic powder 1 tsp. chili powder, or 1/2 tsp. chipotle chili powder 1/2 tsp. dry mustard 1/2 small yellow onion, minced (1/2 cup) 6 tbs ketchup
Preheat the oven to 375 degrees and spray a loaf pan with nonstick cooking spray. In a large bowl, thoroughly mix all the ingredients together. Put the mixture in the loaf pan and smooth it into a loaf shape. Bake the meatloaf for 1 hour (or up to 70 minutes) until it is cooked through (thermometer should read 165 for chicken or turkey, or 160 for beef). Add Ketchup to the top of meatloaf for the last 10 minutes. Let it sit for 10 minutes if time allows, then cut it into slices and serve it.
Note: This meatloaf can also be refrigerated for up to 2 days and served warm or cold in sandwiches. Or, it can be frozen and later thawed and reheated in the oven or microwave.
Scramble Flavor Booster: Use chipotle chili powder rather than traditional chili powder and use spicy barbecue sauce.
