black bean salad

Ingredients
2 cups of black beans1.5 cups of corn1 cup red onion1 cup brown rice.5 cup chopped avocado (less than 1/2 of the avocado)1 lime1 tbsp olive oilsalt and pepper to taste
Directions
Combine ingredients in a large bowl. Slice the lime and juice it into the salad, gently stir to combine. Ingredients can be adjusted to suit your personal preferences, tomatos (in season) would be a good addition.
I serve this either over lettuce, by itself or in a pita.
Makes about 8 servings

    Very tasty! I added a bit of red pepper to it too and had it in a pita. I would like it if this recipe told me serving size and had info for 1 seving instead of the whole recipe. - 5/24/11
