Cheesy Corn Cakes

Ingredients
3/4 C Corn Meal2 Tbsp melter butter1/2 C skim milk, warmed1/2 C shredded reduced fat cheese1/2 C thawed frozen corn
Directions
Place corn meal in blender or food processor to breakdown to a fine texture. Mix in 2 tbsp melted butter and cheese. Slowly mix in milk until a batter forms (will be thick). Add in corn, mix.

Heat skillet over medium heat. Spray with cooking spray. Spoon batter 1 tbsp @ a time and slightly flatten. Cook 2-3 minutes per side. Serve with pico de gallo or as a side to turkey chili.
