Fresh Summer Spaghetti Squash Saute

Ingredients
1 Whole Spaghetti Squash ,cooked and separated1 Large Tomato, diced1 Cup Fresh Mushrooms, sliced1 Leek, diced.5 cup Onion, diced5 Leaves Fresh Basil, diced2 Tbs. Fat Free Italian Dressing.5 Cup Fresh Mozzarella Cheese, shreddedPam Non-stick spraySalt & Pepper to taste
Directions
Cut Spaghetti Squash in half and cover each piece with plastic wrap. Microwave for 10-15 minutes until tender and remove flesh from rind. While that is cooking, dice all vegetables. Heat large non-stick skillet and use non-stick spray. Add Onions, Leek, and Garlic and saute 4 minutes until onions are soft. Add the rest of the vegetables and dressing and saute for 10-12 minutes until tender.
Plate each serving and add salt & pepper to taste. Top with fresh mozzarella cheese.

Makes 4, 2 cup servings! MMMMMMM!
