Fresh Cherry Tomato Sauce w/ Capers and Spinich

Ingredients
2 T Extra virgin olive oil1 LB cherry tomatoes2 cloves minced garlic.5 C diced onion1 T capers (drained)1 C fresh baby spinich
Directions
Wash and dry vegetables:

To saucepan, heat oil.
Add tomatoes and a pinch of salt and pepper, saute 3 min
Add onion and saute 2 min
Add garlic and saute 3 minutes
(Tomatoes shoud have begun to burst and veggies tender)

Sauce:
Pulse in food processor until ingredients are well combined.

Add sauce back to sauce pan.
Stir in capers and spinich.
Wilt spinch for 3-5 minutes.
Add salt and pepper to taste.

Serve over you favorite pasta, chicken, or fish.
Makes 4-6 serving.
