Baked Zucchini and Vegan Mozarella

Ingredients
4 Medium Zucchini1 Bag Veggie Shreds brand Mozzarella Chees1 tbsp Extra Virgin Olive Oil1 tbsp Italian Seasoning1 tbsp garlic
Directions
Preheat oven to 450 degrees.

Wash zucchini and cut ends off, then halve the zucchini. Place the zucchini flat (cut) side up on a baking sheet. Brush the cut surface of the zucchini with extra virgin olive oil, then spread the garlic on the zucchini as well. Sprinkle Italian seasoning over the zucchini and layer the cheese on top.

Bake for 25 minutes. Makes 8 servings.
