Leftover Turkey Enchiladas

Ingredients
15 ounce can of black beans, drained and rinsed9 ounces cubed, leftover turkey1/4 cup chopped onion1/2 cup salsa1/4 cup reduced fat sour cream2.5 ounces reduced fat cheddar, shredded2 cups green chile enchilada sauce6, 8-inch flour tortillas
Directions
Pre-heat oven to 350 degrees.
In a mixing bowl, combine first 6 ingredients. Divide mixture evenly, in the center of each tortilla. Roll tortillas and mixture into a "log".
Pour 1/2 cup of enchilada sauce in the bottom of a 9x13 baking dish. Place rolls on top of the sauce. Pour remaining sauce over the rolls.
Bake for 30 minutes.

    Couldnt find green chile sauce so used additional salsa. Came out great. Froze leftovers for lunch - 1/5/11
