Carrot, potato, onion soup (500g per serving)

Ingredients
1 large baking potato, peeled9 medium organic carrots1 red onion1 tbsp olive oilVegetable stock
Directions
Fry off the oil for a couple of minutes. Add cubed potato, sliced carrots and as much stock as you like.
My recipe yields a pan of soup weighing approx 1980g, 4 servings of a 500g bowl.
Once potato and carrots all softened, put in a blender and mix til smooth. Freezes well.
