Mediterranean Crockpot Beef Stew

Ingredients
1 tbsp olive oil2 medium shallots1 small red onion1 yellow pepper1 red pepper6 cloves of garlic1/2 small purple top turnip1/2 cup green beans6oz cubed beef1 cup chicken stock1 can fire-roasted tomatoes1/2 cup dry quinoa1/3 cup pre-soaked kidney beans2 tbsp balsamic vinegar1/4 cup red wine1 cup waterSpices: rosemary, parsley, sage, tarragon, black pepper4 oz feta cheese
Directions
Put a bit of oil in the bottom of the crockpot (4-5 quart size)
Chop and add shallots, red onions, garlic, yellow and red peppers
Add all remaining ingredients except for feta cheese
Spice to your taste
Cook on low for 6 hours

Top with feta just before serving.

This comes out quite sweet, so if you don't like that, be aware!
