chicken feta and green beans

Ingredients
6 oz. green beans (about 1/2 cup for each of 4 people1 lb. boneless, skinless chicken breasts3 oz. feta cheese (reduced fat)1 tbsp olive oil and a little extra for drizzle1 plum (roma) tomato1 lemon
Directions
Broil or grill chicken with lemon wedges on top

Drop green beans into boiling water and boil for 1-2 minutes. Strain beans, taking them out while they're still bright green and crispy. Toss them into a bowl with 1 tbsp. of olive oil, crumbled feta and chopped tomato. (I like to bake my feta cheese too - but that's optional)

When chicken is done, cut into bite size pieces and toss in with green bean mixture.
