Market Bag Stir Fry w/ Steak

Ingredients
2 heads of baby bok choy, roughly chopped1 package dried oyster mushrooms ( or 2 oz fresh oyster mushrooms)6 oz bean sprouts2 carrots, peeled and chopped1 onion, peeled and chopped1 stalk of lemongrass, chopped3 scallions, chopped2 cloves garlic, minced1 pound of steak (I used some NY strip we had in the freezer), sliced3 tblsp. sesame oilSauce: 1.5 cups of water 2 tbsp. aji-mirin 2 tbsp. soy sauceRice
Directions
Chop your vegetables and reconstitute your mushrooms while heating your wok over high heat. Save the water from the mushrooms - it will be used later.

Heat your sesame oil in the wok and then add the beef, stir-frying until browned, then add the garlic, onions and carrots. Cook until tender, then add the lemongrass, scallion, bok choy, and mushroom.

Stir fry until the bok choy begins to wilt, then add the mushroom water, mirin, soy, and salt to taste.

Serve over rice
