Curried Pumpkin - vegetable side dish

3 cups of raw pumpkin, 1 tbsp minced garlic1 tbsp curry powderblack pepper (to taste)
Cut off the rind of the pumpkin and dice it (about 1/2 inch cubes). Put in a medium pot and add minced garlic, curry powder and black pepper to taste.
Add 3/4 cup of water and mix well.
Bring to the boil, lower head to medium and cook until tender.
Mash well and serve.
Makes 4 1/2 cup servings.
