Low-Carb Artichoke, Spinach Cream Cheese Soup

Ingredients
1 tbsp Celery, diced1 tsp Olive Oil1 cup Chicken Broth1.5 cups Heavy Whipping Cream4 tbsp Philadelphia Cream Cheese with Spinach & Artichoke2 cups Cheddar Cheese, shredded
Directions
1. Saute celery in olive oil until tender.
2. Add chicken broth and simmer 5 minutes.
3. Whisk in heavy cream and cream cheese until smooth. Simmer 5 minutes, or until it starts to thicken.
4. Gradually whisk in cheddar cheese until smooth.
5. Season with salt & pepper
