Creamy Cheesy Mac Casserole

Ingredients
3 cups uncooked elbow macaroni1 stick (1/2 cup) butter, salted or unsalted1 cup all purpose flour6 cups skim milk (nonfat)1 tsp ground black pepper3 cups shredded sharp cheddar cheese, divided1/4 cup lowfat cream cheese1/2 cup crushed saltine crackers
Directions
Cook macaroni according to package directions until tender. While that is cooking, melt the butter in a large sauce pan over medium heat with the black pepper, stirring occasionally. When melted, whisk in the flour, a little at a time to make a thick paste, being sure to scrape the corners of the pan. Stir in the milk, whisking to mix in the flour mixture. Let cook til thickened, stirring every 2 minutes with the whisk. It should not be quite as thick as pudding. Stir in 2-1/2 cups of the shredded cheese and the cream cheese until melted. Turn off heat. When macaroni is done cooking, drain and pour into 4 qt. oven-proof casserole dish. Stir in the ham cubes, then pour the cheese sauce over top and stir in to combine thouroughly. Sprinkle remaining cheese over the top, then the cracker crumbs. Bake in 400 degree oven for 25 to 35 minutes, until heated through and cheese topping is golden brown. Makes 16 (1 cup) servings.
