Bacon, Spinach, Mushroom, and Swiss Quiche

4oz sliced bacon (3-4 slices)2 cups half 'n half cream3 large eggs1/2 cup sliced mushrooms1/2 cup frozen chopped spinach, thawed and squeezed dry1/4 tsp saltDash white pepper1/2 cup shredded or cubed swiss cheese1 tbsp. unsalted butter1 ready to bake 9" deep dish pie crust
Preheat oven to 375 degrees. Chop bacon and fry until almost done, drain on paper towel, and set aside. In same pan, add butter and mushrooms. Gently cook for about 3-5 minutes. Add spinach and bacon to the mushrooms and heat throughly. Remove from heat. Pour half 'n half into a large microwave save bowl and heat for 1 -1/2 minutes. Whisk in eggs, salt and pepper into the half 'n half until well blended. Preferably with a mixer.
Spread bacon, mushroom, and spinach mixture onto bottom of the pie crust. Next sprinkle cheese over the top of mixture. Finally carefully pour egg and half 'n half mixture over it and gently stick in oven for about 40 min or until top is golden brown
