1lb extra lean ground beef2 stalks celery, diced1 cup zuchinni, shreaded2 cloves garlic, minced1 cup onion, chopped1 tsp garlic powder2 tbs horseradish2 tbs dijon mustard1 cup white rice, cooked1/2 cup greek yogurt1 can healthy choice tomato soup1 medium head of cabbage, shreddedcajun seasoning to taste
brown ground beef. Add the celery, garlic, onion, zuchinni and cook until the vegetables are soft. Turn off heat and add garlic powder, horseradish, dijon mustard, and cooked rice. Season cabbage to taste with cajun seasoning and microwave until soft. Spray a 9x13 pan with cooking spray and layer 1/2 of cabbage all of meat mixture and the other 1/2 of cabbage. Mix tomato soup and greek yogurt and spread over casserole. Cover with foil and bake at 350 degrees for 30 minutes. Remove foil and bake for an additional 10 minutes. 8 servings.
