Italian Turkey Sausage & Zucchini Soup

Ingredients
1 package (1.25 pounds) Jennie O Hot Italian Turkey Sausage, casings removed4 cups Pacific Natural Foods Organic Free Range Chicken Broth;3 small zucchini, chunked;3 Onions, coursely chopped;2 Green Peppers, coursely chopped;2 Celery stalks, coursely chopped;1 tbsp Olive Oil;1 cup Cleveland's Own Little Italy Pasta Sauce (or other sauce that is 40 cal per 1/2 cup);1 small can whole tomatoes;3 cloves garlic, mincedItalian seasoning, to taste
Directions
Heat Olive Oil in large stockpot over med-high heat.
Add turkey sausage and brown, breaking up as you cook
Add zucchini, onions, peppers, celery, spices, and garlic and cook until tender.
Add can of tomatoes (undrained) and cook for 5 min, stirring to break them up.
Add tomato sauce and chicken broth, bring to a boil
Reduce heat and simmer until veggies have blended with soup, about 30-40 minutes.

Serve with parmesan cheese and bread (not included in calorie count.)

    Great soup! Next time I think I would use diced tomatoes instead of whole. This makes 8 very big servings of soup, so I will freeze and have lunches all ready for me! - 4/11/10
