Chicken & Legume Soup

Ingredients
Water, 8 cupsChicken Breast, boneless, no skin, 400 grams (about 2 large)Quik Cook Soup Mix (peas, barley, lentils, beans, rice), 450 gram packagePotato, 2 medium, dicedCarrot, 1 medium, thinly slicedOnion, 1 medium, choppedGarlic, 1 clove, pressed or finely choppedGarlic & Herb or other salt-free seasoning, to taste
Directions
Cut chicken into bite-sized pieces, then spray skillet with cooking spray. Cook chicken, onion, garlic, and seasoning until chicken is done, 5-10 minutes. Put water in soup pot and bring to a boil. Meanwhile, chop the potato and carrot. Add soup mix package to boiling water, along with potato, carrot, and cooked chicken/onion mixture. Simmer 55 minutes on low heat or until legumes are tender; serve with whole wheat rolls or bread.

Serves 8. Note: chicken bouillon may be added to heighten flavour, but is not included in this nutritional information.
