Wheat Waffles

Ingredients

~ 2 eggs, separated~ 1 1/4 c lowfat buttermilk~ 1/4 c mashed ripe banana (about 1/2 small banana)~ 1 tsp canola oil~ 1 c sifted whole wheat flour~ 3 tsp baking powder~ 1/2 tsp baking soda~ 1/2 tsp salt
Sift dry ingredients three times. Beat egg yolks and half of buttermilk together. Put the other half of the buttermilk and bananas in a blender and puree. Combine and stir together all of the wet ingredients, except the egg whites. Add dry ingredients and beat until smooth. With wire whisk attachment, beat egg whites until soft peaks form. Fold in egg whites. Cook on non-stick waffle iron.
In my waffle maker this makes 4 sets of 2 waffles, 2 waffles as a serving. If you get a different number of servings, simply divide 754 calories by the number of servings you have to determine calories per serving for your waffle iron. Fat - 16.9, Carbs - 116, Protein - 39.2 divided by servings for those nutrition elements.
