Sweet red pepper tomato soup

Ingredients
5 Red Sweet peppers cut in pieces5 medium tomatoes3 cups vegetable or chicken broth1 large sweet onion3 cloves of garlic crushed2 TBSP olive oil3 TBSP balsamic vinegar3-4 fresh basil leaves1 TBSP cilantro chopped
Directions
Pre heat oven to 350 degrees. Cut tomatoes, peppers, onions, crush garlic cloves. Place all vegetables in large bowl. Add olive oil, vinegar, cilantro and basil leaves. Toss vegetables. Place vegetables on edged cooking sheet. Cook vegetables for 40 minutes. After cooking you can mix in food processor. I prefer to put large pot, add chicken or vegetable broth and used an electronic hand blender. Mix until desired consistency chunky or creamy. Heat all ingredients together for 20 minutes
