Tahini-Free Roasted Red Pepper Zucchini Hummus

Rienzi Chick Peas, 2 cansRoasted red pepper, 1 largeRoasted zucchini, 1 mediumOlive Oil, 4 tbsp Garlic, 4 cloves or to tasteLemon Juice Salt to taste
Roast the red pepper and zucchini on 425 for about 20 minutes, turning after 10. When done let cool and remove skin from red pepper (I leave the zucchini peel because it adds some color).
Blend chick peas, red pepper, zucchini, chopped garlic, lemon juice, olive oil and salt in a food processor - you can adjust the quantities to taste. Add a little water as you blend to make the hummus smoother.
Makes about 8 4-oz. servings.
