Sweet Potato Muffins

Ingredients
2 1/2 c all purpose flour4 tsp baking powder2 tsp baking soda1 tsp cinnamon3/4 tsp ground ginger1/2 tsp salt3/4 c brown sugar1/2 c melted butter4 large eggs1 tsp vanilla3 1/2 c mashed sweet potato
Directions
Mix dry ingredients together in a bowl.
Mix wet ingredients together and add to dry ingredients. Stir until blended but not smooth.

Bake in 400 degree oven for 15-20 mins or until tester comes out clean.

Makes 24 large muffins.
