Banana Bread

Ingredients
1 3/4 c flour1/2 t. salt3/4 t. baking soda1 1/4 t. cream of tartar1/3 c. shortening2/3 c sugar2 eggs1 c. mashed ripe banana1/2 to 1 c. chopped walnuts (optional)
Directions
makes 18 1/2" thick slices, 9" x 5" loaf
Pre-heat oven to 350º. Combine and sift flour, baking soda, salt, and cream of tartar. Cream shortening, add sugar until fluffy. Add eggs, beat well. Add flour mixture and banana alternately until well mixed. Stir in chopped walnuts, if desired. Spray 9 x 5 loaf pan w/ cooking spray and bake for 1 hour
