Coconut Chicken Suprise

1/4 Cup Coconut Milk, Sun Luck Brand (I just found this to be the least caloriffic)1 large Scallion1-2 Cloves garlic (to taste)1 Cup Rice (I use the Minute single serving style...but you can substitute whatever you have)1/2 Chicken BreastDash of Tabasco Sauce (or hot sauce of any kind)1/4 TSP Ground Cinnamon
Cut chicken into bite size pieces and cut scallion into small rounds.
Saute garlic and scallion in vegetable oil spray, and chicken and cook until lightly browned.
Add coconut milk, Tabasco, and cinnamon, reduce to low heat.
Simmer lightly for 2 to 3 minutes.
Prepare rice as per instructions, cover rice with chicken and sauce. Enjoy!
*Note: I used a high-fiber low calorie tortilla to eat it finger style :)
