Stir-fried Tofu, Broccoli, and Tomatoes

1 block extra-firm tofu1 head broccoli1 tomato, cubed1/3 c vegetable broth2 dashes garam masala2 dashes curry powder2 dashes ginger
(Prepare tofu ahead of time by cutting into smaller blocks and heating in the oven at 350 for 25 minutes)
Spray medium pan with nonstick spray and let sit over medium heat.
Cut tofu into bite-sized pieces. Add it to the pan with one dash of each of the spices.
While the tofu cooks (stir occasionally), cut the broccoli into small 'trees.' Cube the tomato. After a few minutes, add them to the pan.
Add one dash of each of the spices to the vegetable broth and stir before pouring it into the pan.
Cover and let simmer, stirring occasionally, until the broccoli is soft and the flavors have cooked through.
