Spelt & Coconut Cookies

Ingredients
1 cup coconut butter/oil, warmed1 cup almond meal1 1/4 cups spelt flour (or use Tosca's Power Flour)1/2 tsp baking soda1/4 cup steviva blend 1/4 cup coconut milk (or as much is needed to make the dough stick together to form balls)3/4 cup coconut, shredded, unsweetened1 cup raisins
Directions
Preheat oven to 375 degrees.
Mix coconut oil with almond meal. Add the flour and rest of ingredients together. Place on a parchment lined baking sheet. Bake for approx 15 minutes.

Makes 16 large cookies.
