1. Melt butter with olive oil in large pot.2. Add the small chopped onion and garlic.3. After sauteing for about 2 minutes, add the leek (mostly white part, chopped and washed). Cook down until translucent.4. Add chicken stock and potatoes. Cook until potatoes are soft.5. Use an emersion blender or blend small bits in a blender until smooth.6. Add half and half and cook until hot. Serve immediately.
