Ham & Cheese Muffins

2 eggs3 cups of reduced fat Bisquick1 cup skim milk3 Tbsp vegetable oil4oz (.5 cup) chredded cheddar cheese3/4 cup (.25 #) fully cooked chopped ham
Heat oven to 400
spray top and sides of muffins pan with PAM
beat eggs slightly in medium bowl
Stir in Bisquick, milk, oil just until moistened
Stir in 3/4 c. of the cheese and all the ham
divide batter evenly between the 12 muffins cups
sprinkle with remaining cheese
bake 18 - 20 minutes or until light golden brown
immediatley remove from pan
serve warm
wrap and refrigerate any remaing muffins
makes 12
tip: to reheat cold muffins put in microwave for 30 seconds
