Flank Steak with Parsley and Lemon

Ingredients
One 1.25 or 1.5 flank steak, well trimmed; salt and freshly ground black pepper; 4 tsp. olive oil; 1 tablespoon fresh lemon juice; 2 tablespoons fresh, chopped parsley; 1 clove garlic, chopped; 1/2 tsp grated lemon peel
Directions
Preheat broiler. Rinse and pat dry flank steak. Sprinkle both sides of steak lightly with salt and pepper. Place on broiler pan and broil 4-5 minutes on each side for medium rare. (Steak should be a tad pinkish inside, not brown or it will be overcooked and too dry.) Transfer to carving board (one you'd use for a turkey--with areas to hold in liquid)--or place some old towels under your carving board so you won't have a mess. Cover, let stand for 5 minutes. Meanwhile, in small bowl, whisk oil, lemon juice, parsley, garlic, lemon peel and 1/4 tsp each of salt and pepper. Slice steak diagonally against the grain. Transfer to platter. Pour on the whisked dressing. Serve with asparagus or a salad--and perhaps a bit of potato. One of my hubby's favorite dinners!
