Lima Bean & Kielbasa Soup

Ingredients
1 package (16 ounce) dried lima beans, sorted and rinsed1 pound kielbasa sausage, cut into 1/4 inch slices1 cup carrots, cut into 1/4 inch slices1 cup celery, cut into 1/4 inch slices1 cup chopped onion2 cloves garlic, finely chopped6 cups water1 teaspoon salt1/2 teaspoon pepper1 can (14.5 oz.) diced tomatoes, no salt added, undrained
Directions
Mix all ingredients except tomatoes in 5 - 6 quart slow cooker. Cover and cook on high heat setting 10 - 12 hours or until beans are tender. (Note: although the recipe does not call for it, I pre-soaked my beans.)

Stir in tomatoes. Cover and cook on high heat setting until heated through.

Makes approximately 10 1.5 cup servings.
