Baked Cheese Rice

Ingredients
3 cups cooked rice2 cups grated cheddar cheese1 cup finely minced green pepper1/2 cup finely minced shallots2 eggs, beaten1 1/4 cups milk1 tsp. salt1/4 tsp. cayenne pepper1/2 cup seasoned bread crumbs1 tbsp. melted butter
Directions
Mix the green pepper and the shallots. Arrange alternate layers of cooked rice, cheese, and green peppers and shallots in a buttered baking dish. Mix together the eggs, milk, salt, and pepper and pour over the rice and cheese mixture. Mix the bread crumbes and butter and sprinkle over the top. Bake in a preheated 350-degree oven about 45 minutes or until set. Will serve 4-6.
