Gluten Free Banana Nut Muffins

Ingredients
1/2 cup butter or oil2/3 cup granulated sugar4 lg eggs2/3 cup brown rice flour2/3 cup white rice flour2/3 cup tapioca flour1/2 cup corn starch1/4 cup sorghum flour1/4 cup potato starch5 Tbsp coconut flour2 tsp baking soda2 tsp baking powder1/2 tsp kosher salt1 1/2 cups plain yogurt2 cups mashed banana1 1/2 cups applesauce3/4 cup vanilla flavored rice milk1 cup ground flaxseed1 cup chopped walnuts
Directions
Cream together butter and sugar (or oil and sugar), then mix in eggs. Add applesauce, milk, yogurt, banana, and vanilla. In a separate large bowl, sift together all the flours, starches, salt, baking soda, and baking powder. While mixing, add dry ingredients to wet ingredients 1/2 cup at a time. When wet and dry ingred have been combined, stir in the flaxseed and nuts by hand. Drop into lined muffin tins, 1/8 cup of mix per muffin. Bake 20-25 minutes at 375 degrees.
*you can leave out the butter or oil for an even healthier muffin, just add a few Tbsps applesauce or rice milk of the batter seems dry at all.
