Open Faced Egg Salad Sandwiches (with a kick)

Ingredients
5 Hard boiled eggs1 tbsp horseradish (you may want to adjust this according to taste)5 tbsp light mayo or salad dressingsalt and pepper to taste
Directions
Boil eggs for about 15 min until done. Let cool. Remove from shell and dice up to desired texture. Add mayo, horseradish and salt and pepper to taste.

I then take this mixture and add to a piece of toast (open) with lettuce. That way I can enjoy egg salad without feeling so guilty!

Calories don't include bread...that way you can add your own or use crackers or pita or whatever.
