shrimp stuffed mushrooms

2 pounds large mushrooms1 pound cooked shrimp (40-50/lb)5 large scallions2 Tablespoons whipped butter2 ounces Pepper Jack CheeseOld Bay Seasoning to taste
Peel mushrooms and remove stems. Peel shrimp if necessary.
Mince mushroom stems, scallions, and 1/2 the shrimp; saute in 2 tablespoons whipped butter. Add Old Bay Spice to taste. Add cheese to keep the mixture together.
In each mushroom add 1 or 2 whole peeled shrimp into each mushroom cap (2 pounds large mushrooms is about 18 caps). Top with sauteed mixture of shrimp, scallions, mushroom stems and cheese.
Bake for 20 minutes at 400 degrees.
Makes 18 servings - 1 mushroom cap each.
