Sherri's veggie & rice lettuce wraps

12 oz package Morning Star crumbles1 cup mirepoix style frozen chopped vegetables1 package (2 cups) Uncle Ben's whole grain chicken flavored ready rice1 8 oz package raw sliced mushrooms1 8 oz can sliced water chestnuts4 T lite soy sauce1/4 cup corn starch1/4 cup water1 t red pepper flakessalt & pepper12 oz bibb lettuce
1. spray a nonstick pan with cooking spray and saute mirepoix mix and mushrooms until tender.
2. meanwhile, mix the water and corn starch together. add the soy sauce to the corn starch mix then pour into skillet with veggies.
3. add the water chestnuts and veggie crumbles to the pan. continue to cook over medium heat, stirring to mix and coat everything in the sauce.
4. microwave the rice according to package directions, then add to skillet.
5. season all with red pepper flakes and salt/pepper to taste
6. serve with lettuce leaves and wrap mixture inside
