Ceviche de Camaron (Shrimp Ceviche)

Ingredients
per serving, you'll need:-4 oz shrimp-1/2 cup of chopped tomatoes-1/2 cup RED onions sliced thin-1 tbsp ketchup-salt to taste
Directions
1. clean and gut the shrimp
2. in a pot, put 1/4 cup of water (up to like 1/2 cup for two servings) put the shrimp to boil until they release a pinkish juice and they are a pink color
3. take the shrimp (juice and all), the lime juice, the ketchup and mix them all.
4. add the onions and tomatoes
5. add salt to taste

(it's great with rice, also awesome for a romantic dinner that's low on calories!)
