Lentil Soup

Ingredients
2 bottles of water1 cup French lentils1 can stewed tomatoes1 cup diced tomatoes1 cup celery chopped3 carrots chopped1/2 cup diced green onions, or to taste3 cloves garlic, crushed1/2 cup green bell peppers, chopped1 15 oz can pumpkin1/2 package Mori-Nu Soft Tofu
Directions
Wash and drain the lentils. Cook on medium heat 10 minutes. Add 1 can stewed tomatoes, 1 cup diced tomatoes, 1 cup chopped celery, 3 carrots chopped, 1/2 cup diced green onions, 2 tablespoons minced dried onions, 1 tablespoon garlic powder, 1/2 cup chopped green bell peppers. Mix 1/2 package of Mori-Nu Soft Tofu with 1 can pumpkin. Add to the pot. Cook 1 hour on low or until all is tender. Makes 12 1-cup servings.
