Italian style chicken and black bean stew

Ingredients
1 tbsp olive oil1 medium onion, chopped2 cloves garlic, chopped1 bunch fresh spinach, roughly chopped, OR 1/2 bag frozen spinach2 large raw carrots, chopped2 medium tomatoes, chopped1 skinless chicken breast, cut into 1/2" cubes2 tsp dry italian herbs1 can black beans, rinsed
Directions
Sautee the chopped onion in the olive oil over medium heat for 4 min, or until the onion is translucent. Add garlic, carrot, chicken, herbs, and spinach. Cook, covered, over medium-low heat for 20 minutes, stirring occasionally to make sure it does not stick. Add tomato and beans. Cook, covered, for another 10 minutes.
