Pad Thai - using Thai Kitchen suace and noodles box

1 box Thai Kitchen Pad Thai box, including sauce and rice noodles3 scallions, in 1-inch sections2 cups bean sprouts1 chicken breast, boneless, skinless1 tbsp olive oil1/4 cup peanuts, chopped small
Makes 3 servings, about 2 cups each.
Boil 4 cups water and remove from heat. Submerge rice noodles in water for 3 minutes.
Drain noodles and rinse with cold water to stop cooking.
Heat olive oil in pan
Cube the chicken and saute in the olive oil till browned
Add cooked rice noodles, stir fry for 1 minutes
Add sauce packet, stir until combined
Add bean sprouts, scallions and shrimp; cook until heated
Add peanuts and serve!
Hint - use a food processor to quickly shop your peanuts.
