Chocolate Mint Chip & Coconut Cookies

2 sticks butter, softened3/4 cup granulated sugar3/4 cup light brown sugar, packed1/ tsp vanilla2 eggs1/2 tsp salt1 tsp baking soda2 3/4 cups flour1 bag (10 oz) Andes Creme De Menthe Baking Chips1 1/2 cups Sweetened Coconut C
Preheat oven to 375 degrees Fahrenheit
Combine butter, both sugars, and vanilla in a bowl, stir until creamy
Beat eggs and add to the sugar mixture with the salt and baking soda, stir until well combined
Gradually add 2 cups flour
Add Andes chips and coconut, stir until well mixed
Add remaining flour and stir to combine
Measure out approximately 1 Tbsp of dough and form a loose ball. Place on baking sheet about 1 inch apart. Bake for 8-10 minutes or until edges are starting to brown. Let cool on baking sheet for a few minutes then move to a wire rack to cool completely.
