Apple Chicken Salad

Ingredients
12 oz chicken breast, cooked and diced 1 medium Fuji or Gala apple, diced1 Tbsp lemon juice2 ribs celery, diced1/2 small red onion, diced1/4 C Craisins1/4 C pecans1 C Hellmann's light mayonnaise2 Tbsp dijon mustard
Directions
In a medium-sized bowl, pour lemon juice over diced apple. Toss to coat. Add diced chicken, celery, and onion to apple. Add pecans and Craisins. In a small bowl, combine mayo and mustard. Pour over salad ingredients, stirring to combine thoroughly.

Serving size = 1/2 cup.

Serve in pita pockets, wrapped in flat bread, on crackers, or on whole wheat bread. Not included in calorie count.
