2 eggsnonstick cooking spray2 tablespoons chunky salsa2 tablespoons black beans (canned or already cooked)black pepper to tastetabasco sauce (optional)
Lightly spray a skillet with nonstick cooking spray. Whisk the eggs until smooth, add to pan. Add black pepper to eggs. Cook on medium-high until eggs almost done. Add the black beans and salsa and stir into eggs. Turn down the heat and continue cooking until most of liquid is absorbed. If you like a little spice, add a few dashes of tabasco when you add the salsa and beans. You can also add cayenne pepper or cheese if you like, just remember to change the nutritional info if you add cheese. This makes one bowl. You can also use this to make a great breakfast burrito filling too.
