1 (15 ounce can no-salt added) black beans, drained and rinsed3 large eggs1/3 cup of melted butter, more for the baking dish1/4 cup cocoa powder1/2 teaspoon of salt2 teaspoons of vanilla extract1/2 cup, plus 2 tablespoons of diabetisweet (or combo of diabetisweet and splenda)1/2 cup sugar free chocolate chips1/2 cup of finely chopped walnuts (or any kind you choose)
Preheat oven to 350 - Butter an 8-inch baking pan
After rinsing black beans, place beans, eggs, melted butter, cocoa powder, salt, vanilla and splenda in the bowl of a food processor and blend until smooth. Remove blade and then stir in chips and walnuts, transfer mixture to the prepared pan. Bake for 30 to 35 minutes, or until just set in the center. Cool before cutting into squares.
