Lisa's Thai Spaghetti Squash, Egg Plant & Misc. Veggie Casserole

Ingredients
Rooster Brand Coconut Milk, 1 cupRed Curry, 2 tsp.Garlic, 2 clovesWater, tap, 3 cup (8 fl oz)Sauce - Thai Red Curry Sauce - Trader Joe's, 1 cupZucchini, 2 cup, slicedOnion (Raw), 2 oz 1 egg plant1 Spaghetti SquashBaby Carrots, raw, 20 medium
Directions
Bake large Spaghetti Squash in the oven (45 mins to an hour at 350 degrees).

In deep bottom heavy pan:
Saute red curry, garlic & onion for about 3 mins

Add currry sauce and 1/2 c. coconut milk

Add water and rest of coconut milk and rest of veggies (including egg plant)....simmer until desired doneness.

Add Spaghetti Squash (shredded from shell).

Makes about 10 cups
