Simple Lentil Stew

Ingredients
* Lentils, .5 cup * Tomato Sauce, .33 cup * Water, tap, 1 cup (8 fl oz) * Red Potato, 600 grams * Olive Oil, 2 tbsp * Onions, raw, 1 large * Garlic, 3 cloves * Pepper, black, 1 tsp * Chili powder, 1 tsp * Oregano, ground, .5 tsp* red wine, 2 fl oz
Directions
Cook cubed potatoes (1" cubes) in olive oil until somewhat browned, about 15 minutes, stirring frequently to minimize sticking to pan. Add diced onion, sautee until transluscent, add garlic. Deglaze pan with a splash of wine (turn up heat, scrape bits off bottom of pan as alcohol cooks off) briefly, then add water, lentils, tomato sauce, and spices (to taste- dried mustard, thyme, lots of other spices are good here, too!).

Simmer 35-45 minutes or until potatoes and lentils are tender.
