Creamy Mushroom Soup

Ingredients
20 oz mushrooms, trimmed and quartered1 medium onion, chopped2T olive oil1 medium baking potato, peeled and chopped4 c chicken brothsalt and pepper to taste
Directions
Saute onion in olive oil until tender. Add mushrooms and saute 5 minutes. Add potato, chicken broth, and water to cover. Bring to a boil, lower heat and simmer 20-30 minutes (until potato is cooked through). Let cool some before processing in a blender to a creamy consistency. Add salt and pepper to taste. Makes 8 1 cup servings.
