Curried Swiss Chard Scramble

Ingredients
Red Swiss Chard, 180 grams (6 oz.) - choppedEgg, fresh, 4 large, beatenEgg Beaters, 8 oz (liquid egg whites would be better)*Coriander seed, .25 tsp Mustard seed, yellow, .25 tsp Curry powder, 1 tbsp Turmeric, ground, .5 tsp Cumin, ground, 1 tsp.*Fresh Tomato, 1 oz - diced*mushroom, fresh, 1 oz - sliced*Garlic (1 Clove), dicedOrange Peel, 1 tsp (zest)*Extra Virgin Olive Oil, 1/2 tsp.salt & pepper to taste
Directions
Cut off chard stems & chop fine. Sautee curry & spices with EVOO and chard stems for 5 minutes. Add water as necessary to prevent burning. Add garlic & mushroom and tomato & cook for another 5 mins. Add chard and sautee until just wilted, then add all eggs and stir occasionally until eggs are set to your liking. I like mine really well done. Sprinkle additional curry powder, salt & pepper to taste. This makes 4 6 oz. servings - good size if you are having other items, or three 8 oz. servings - best if you are not having any side items.
