salad dressing w/thyme and shallots

Ingredients
8 T vinegar (rice or balsamic are best) 8 T olive oil2 t. chopped fresh thyme (or to taste)2 T. diced shallots (substitute with onion and/or garlic, if desired)*8 T is 1/2 cup.
Directions
mix all ingredients in glass bottle or jar and enjoy
do not refrigerate, store in cool area out of sunlight, use within 2 weeks
