Mexican Brunch Tortilla

Ingredients
1 Tbsp. Extra-Virgin Olive Oil1 Large Onion, chopped1 Clove Garlic, minced1-2 Jalapeno Chilies, seeded and minced (optional)1-1/2 cups Tomatoes, chopped with juice2 Tsp Chili PowderSalt and Pepper to taste2 Tbsp Chopped Cilantro6 Tortillas1 can (15oz) Refried Beans, low fat or fat free6 Large EggsShredded Monterey Jack Cheese
Directions
To make the sauce, heat oil in a medium pan over medium-high heat. Add onion and garlic, cook for 3-5 minutes. Add Jalapeno Chilies, Tomatoes with juice, and Chili Powder. Cook and stir for 3-5 minutes until tomatoes are soft. Add salt and pepper to taste and remove from heat. Add cilantro.
Meanwhile, warm tortillas in oven on a very low temperature so that they are warm all the way through but still soft. Warm refried beans in a small pan over medium heat.
Coat a large skillet with a small amount of oil or cooking spray. Fry eggs without flipping for about 1 minute, or until egg is set. Cover skillet to finish cooking, about 1-2 minutes.
To serve, place a warm tortilla on each plate. Spread with refried beans. Place an egg on each tortilla and top with tomato sauce. Add shredded cheese, if desired.
